Cretan salad with sea bread

INGREDIENTS

  • 100g of stale/dry bread
  • 300g of Greek feta cheese
  • 2 red peppers
  • 4 tomatoes
  • 1 red onion
  • 8 tablespoons of capers
  • 12 black olives
  • The juice from 1 lemon
  • 8 tablespoons of olive oil
  • 1 crushed clove of garlic
  • 1 teaspoon of mixed herbs
  • Salt and pepper

 

PREPARATION

For the vinaigrette, whisk together the oil, lemon juice, garlic, salt and pepper to create an emulsion.

Cut the bread into large croutons.
Share the croutons, and half of the vinaigrette, between 4 deep plates.

Top with the cubed tomatoes and thinly sliced peppers and onion.
Add the olives, capers and a large piece of feta for each plate.

Season with salt and pepper and a sprinkle of mixed herbs.
